I think almond milk can be however you like it, sweet, unsweetened, vanilla or chocolate. I will give you the basics and you can play with adding whatever you like. As you can see in the above picture, I have collected a few things that make things easier. A Vitamix blender, nutbag ( I dare you not to giggle) and a big glass jar. You do need a blender. Something that will chop through the nuts and can run pretty high, even a bullet will work. The nut bag is a good way to strain and separate the liquid from the solids, but you can use anything will do the same type of job. An old pair of stockings, metal strainer or even cheese cloth. Kidding about the stockings, but I think you get what I'm saying. Just use what you have. This recipe will be just a suggestion and if you know me, you know that I do not follow directions very well. Experiment and have fun. Organic ingredients are the best, but the most important thing is make sure that your almonds are raw.
1 Cup Raw Almonds clean water, none of that chlorinated, fluoride filled yucky stuff 4 cups clean water 1 tsp vanilla 4 dates (without pit) for sweetener. If you do not like or have them, you can use any other sweetener you like To start with take the cup of almonds (peels on are fine) and cover them with enough water that it is a few inches above the almonds. Let soak, covered for at least 2 hours, overnight is fine, more than that I would drain the water and you can store in the fridge to wait for you for up to a day. Throw into the blender 4 cups water, all the soaked almonds, vanilla and dates. Blend on high for 2 minutes. Transfer to bottle or bowl while you strain. You will find that it is helpful to squeeze the liquid out well by hand once it stops flowing. You will be left with a almond mash that you can discard or use for something else. Cover the almond milk and put in the fridge. It is great for so many things. You can drink it plain, put in a smoothies, it is vegan, bake with it, the possibilities are endless. Enjoy!
